Ingredients
- 2 salmon fillets
- 400 g baby potatoes, halved if large
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil, divided
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon chili powder (optional)
- ½ cup shredded mozzarella or Parmesan cheese
- 1 tablespoon fresh parsley, chopped
- salt and black pepper to taste
Instructions
1. Roast the potatoes
Preheat oven to 400°F (200°C).
Place potatoes on a baking tray and toss with:
- 1 tablespoon olive oil
- minced garlic
- oregano
- salt and pepper
Roast for 25–30 minutes until golden and tender.
2. Bake the asparagus
During the last 12 minutes of roasting, place asparagus on the tray next to the potatoes.
Drizzle with olive oil and season with salt and pepper.
Sprinkle shredded cheese on top.
Bake until asparagus is tender and cheese is melted.
3. Cook the salmon
Season salmon fillets with smoked paprika, chili powder (optional), salt, and black pepper.
Heat a skillet with a small amount of olive oil over medium-high heat.
Sear salmon for 3–4 minutes per side until golden on the outside and flaky inside.
4. Serve
Plate roasted potatoes, cheesy asparagus, and salmon.
Garnish with fresh parsley.
