Ingredients
1 sheet puff pastry
7 oz fresh baby spinach
2 garlic cloves, minced
1 tablespoon olive oil
8 oz cream cheese, softened
1 cup shredded mozzarella cheese
1 large egg
1 egg yolk (for brushing)
Salt to taste
Black pepper to taste
Instructions
1. Prepare the Spinach Filling
Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
Heat olive oil in a pan over medium heat.
Add the minced garlic and sauté for about 1–2 minutes until fragrant.
Add the spinach, season with salt and black pepper, and cook until wilted.
Remove from heat and allow the mixture to cool slightly.
2. Prepare the Puff Pastry
Roll out the puff pastry sheet and cut it into 6 large squares or 12 smaller squares, depending on your preferred size.
Place the pastry squares on the prepared baking tray.
3. Mix the Filling
In a mixing bowl, combine the cooked spinach mixture, cream cheese, mozzarella cheese, and one egg.
Season with salt and pepper and mix until well combined and creamy.
4. Assemble the Puffs
Spoon the spinach filling into the center of each pastry square.
Fold two opposite corners toward the center and press gently to seal.
Brush the tops with egg yolk for a golden finish.
5. Bake
Bake for 25–35 minutes, or until the puffs are golden brown and crispy.
Allow to cool slightly before serving.
