4–6 white fish fillets (such as cod, haddock, or tilapia) – about 1½–2 lbs total

1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1 teaspoon salt

1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 large egg
1 cup cold water or club soda

Instructions
1. Prepare the Fish
Pat the fish fillets dry with paper towels. Lightly season them with salt and freshly ground black pepper.
2. Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder until well combined.
3. Prepare the Batter
Beat the egg in a separate bowl, then add it to the dry mixture. Gradually whisk in the cold water or club soda until the batter becomes smooth and slightly thick, enough to coat the back of a spoon.
4. Fry the Fish
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Dip each fish fillet into the batter, allowing the excess to drip off.
