1 ribeye or New York strip steak (10–12 oz)

2 medium russet potatoes, diced

1 large yellow onion, chopped

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon garlic powder

Salt and freshly cracked black pepper to taste

1 teaspoon chopped parsley (optional)

Optional:

1 teaspoon balsamic vinegar (for the onions)

Instructions

1. Roast the Potatoes

Preheat the oven to 425°F (220°C).

In a bowl, toss the diced potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.

Spread the potatoes on a baking sheet in a single layer and roast for 25–30 minutes, turning halfway through, until they become golden and crispy.
