Ingredients
1 ribeye or New York strip steak (10–12 oz)
2 medium russet potatoes, diced
1 large yellow onion, chopped
2 tablespoons olive oil
2 tablespoons unsalted butter
1 teaspoon garlic powder
Salt and freshly cracked black pepper to taste
1 teaspoon chopped parsley (optional)
Optional:
1 teaspoon balsamic vinegar (for the onions)
Instructions
1. Roast the Potatoes
Preheat the oven to 425°F (220°C).
In a bowl, toss the diced potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.
Spread the potatoes on a baking sheet in a single layer and roast for 25–30 minutes, turning halfway through, until they become golden and crispy.
2. Caramelize the Onions
Heat butter in a skillet over medium-low heat.
Add the chopped onions and cook slowly for 15–20 minutes, stirring occasionally, until they become soft, golden, and caramelized.
For extra flavor, add a small splash of balsamic vinegar during the last few minutes of cooking.
3. Cook the Steak
Season the steak generously with salt and cracked black pepper.
Heat a grill or skillet over high heat and cook the steak for 3–4 minutes per side for medium-rare, or longer depending on your preferred doneness.
Remove from heat and allow the steak to rest for 5 minutes before slicing.
4. Assemble the Dish
Slice the steak and top it with the caramelized onions.
Serve with the roasted potatoes on the side and sprinkle with chopped parsley for garnish.
