2 whole trout, cleaned and gutted
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
Lemon wedges (for serving)

Pat the trout dry using paper towels.
Rub the marinade generously over the fish, inside and out. Let it marinate for 15–20 minutes to enhance the flavor.
3. Preheat the Grill
Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
4. Grill the Trout
Place the trout directly on the grill and cook for 4–5 minutes per side, depending on thickness, until the skin is crispy and the fish flakes easily with a fork.
5. Serve
Transfer to a serving plate, garnish with fresh parsley or cilantro, and serve with lemon wedges.
