  • 10–12 lasagna noodles
  • 700 g (24 oz) tomato sauce
  • 400 g (14 oz) ricotta cheese
  • 300 g (10 oz) spinach (fresh or frozen)
  • 200 g (7 oz) shredded mozzarella
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • Pinch of paprika or chili flakes (optional)
  • Fresh basil leaves for garnish

👩‍🍳 Instructions

1️⃣ Prepare the Sauce

  1. Heat olive oil over medium heat.
  2. Sauté the onion for 3–4 minutes until soft and translucent.
  3. Add garlic and cook for 30 seconds.
  4. Stir in tomato sauce, salt, pepper, and paprika.
  5. Simmer for 10 minutes to develop flavor.

2️⃣ Prepare the Spinach

  • Fresh spinach: sauté for 2–3 minutes, then drain.
  • Frozen spinach: thaw completely and squeeze out excess water.

Mix spinach with ricotta cheese and season to taste.

3️⃣ Assemble the Lasagna

  1. Preheat oven to 400°F (200°C).
  2. Spread a thin layer of tomato sauce on the bottom of a baking dish (approx. 9×13 inch).
  3. Add a layer of lasagna noodles.
  4. Spread ricotta-spinach mixture, then add sauce.
  5. Repeat layers until ingredients are used.
  6. Finish with noodles, remaining sauce, and mozzarella on top.

4️⃣ Bake

  • Bake for 30–35 minutes until bubbly and golden.
  • Let rest for 10 minutes before slicing.
  • Garnish with fresh basil before serving.
