- 2 large chicken breasts, cut into thick pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp paprika

For the Potatoes
- 500 g baby potatoes
- 1 tbsp butter
- Salt and pepper to taste
For the Creamy Garlic Sauce
- 2 tbsp butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup shredded mozzarella or mild cheese (optional, for extra creaminess)
- ½ tsp dried thyme or rosemary
- Fresh parsley, chopped (for garnish)
Instructions
1. Cook the Potatoes
Boil the baby potatoes in salted water for about 10 minutes until slightly tender.
Drain and set aside.
Heat butter in a skillet over medium heat, add the potatoes, and sauté until golden and lightly crispy. Remove from the pan and set aside.
2. Cook the Chicken
Season the chicken with salt, pepper, and paprika.
In the same skillet, heat olive oil and butter over medium-high heat. Add the chicken and sear for 4–5 minutes per side until golden brown. Remove and set aside.
3. Make the Creamy Garlic Sauce
In the same pan, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in the chicken broth and stir well, scraping up the flavorful bits from the bottom of the pan.
Add the heavy cream and bring to a gentle simmer. Stir in the shredded cheese and thyme, cooking until the sauce becomes smooth and creamy.
4. Combine Everything
Return the chicken and potatoes to the skillet. Let them simmer in the sauce for about 5 minutes so everything absorbs the flavor.
5. Serve
