
This crustless quiche is rich, creamy, and packed with flavor. It’s a perfect low-carb, protein-rich dish that works for breakfast, brunch, or a light family dinner.
Ingredients
- 6 large eggs
- 1 cup whole milk (or half-and-half for extra creaminess)
- ½ cup heavy cream
- 1 cup shredded sharp cheddar cheese
- ½ cup cooked bacon, crumbled
- 1 cup fresh spinach, chopped
- ⅓ cup goat cheese, crumbled (optional for tangy flavor)
- 1 small shallot, finely chopped
- ¼ tsp garlic powder
- Salt & black pepper to taste
- Pinch of nutmeg (optional)
Instructions
1️⃣ Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
2️⃣ Cook the vegetables
Sauté the chopped shallot and spinach in a lightly oiled skillet over medium heat until wilted. Set aside to cool slightly.
3️⃣ Prepare the egg mixture
In a large bowl, whisk eggs, milk, heavy cream, garlic powder, nutmeg, salt, and pepper until smooth.
4️⃣ Combine ingredients
Stir in cheddar cheese, bacon, sautéed spinach, and goat cheese.
5️⃣ Bake
Pour mixture into the prepared dish. Bake for 35–40 minutes until the center is set and the top is lightly golden.
6️⃣ Cool & serve
Let rest for 5–10 minutes before slicing. Serve warm or at room temperature.
