Easy Chicken Provençal (French-Inspired Healthy Dinner)

This Easy Chicken Provençal is a light, flavorful French-inspired dish made with tender chicken, olive oil, fresh herbs, and colorful vegetables.

Ingredients

  • 1½ pounds boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup mixed bell peppers, sliced
  • 1 cup cherry tomatoes, halved
  • 2 sprigs fresh thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • salt and black pepper to taste
  • ¼ cup white wine (optional)

Optional garnish:

  • fresh parsley or thyme

Instructions

1. Cook the chicken

Heat olive oil in a large skillet over medium-high heat.

Add chicken pieces and cook for about 5–6 minutes until lightly golden.

Remove chicken from the pan and set aside.

2. Cook the vegetables

In the same skillet, add chopped onion, garlic, bell peppers, and cherry tomatoes.

Cook for about 5 minutes until vegetables begin to soften.

3. Add herbs and seasoning

Stir in thyme, rosemary, bay leaf, salt, and black pepper.

Mix well to release the flavors of the herbs.

4. Simmer the dish

Return chicken to the skillet.

Add white wine if using.

Reduce heat to medium-low, cover, and let simmer for 15–20 minutes until chicken is fully cooked and tender.

5. Serve

Remove bay leaf before serving.

Garnish with fresh herbs if desired.

Serve warm.
