Ingredients

  • 1 tbsp olive oil
  • 1 lb sweet Italian turkey sausage (or pork sausage if preferred)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • ½ cup marsala wine
  • salt and freshly ground black pepper, to taste
  • hoagie rolls or sandwich buns (optional)

Instructions

1. Brown the sausage

Heat olive oil in a large skillet over medium heat. Add the sausage links and cook for about 7–8 minutes, turning occasionally, until browned on all sides. Remove from the skillet and set aside.

2. Cook the vegetables

In the same skillet, add the sliced peppers and onions. Cook for 5–7 minutes until they begin to soften. Add minced garlic and cook for another minute until fragrant.

3. Add flavor

Stir in the tomato paste and cook for about 2 minutes to deepen the flavor. Pour in the marsala wine and scrape up any browned bits from the bottom of the skillet. Let the sauce simmer for 3–4 minutes until slightly reduced.

4. Simmer together

Return the sausages to the skillet. Cover and cook for 10–12 minutes until the sausages are fully cooked and the vegetables are tender.

5. Serve

Season with salt and pepper to taste. Serve hot as a main dish or inside warm hoagie rolls for a hearty sandwich.
