Ingredients
For the crust
- 1½ cups all-purpose flour
- ½ cup cold butter, cubed
- ¼ tsp salt
- 3–4 tbsp ice water
(or use ready-made pie dough for convenience)
For the filling
- 4 large eggs
- ¾ cup milk or heavy cream
- 1 cup shredded cheese (cheddar, feta, or Swiss)
- ½ cup cooked spinach, sautéed onions, or cooked bacon (optional)
- Salt and black pepper to taste
Instructions
1. Prepare the crust
- In a bowl, mix flour and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water and mix until a soft dough forms.
- Wrap the dough and refrigerate for at least 1 hour.
- Roll out the dough and cut small circles using a cutter or glass.
- Press dough circles into a greased muffin tin, covering the bottom and sides.
- (Optional) Pre-bake the crust for 8–10 minutes to prevent shrinking.
2. Prepare the filling
- In a mixing bowl, whisk eggs with milk or cream.
- Season with salt and pepper.
- Stir in cheese and any optional fillings such as spinach, onions, or bacon.
3. Assemble and bake
- Pour the filling evenly into each tart shell.
- Bake in a preheated oven at 350°F (175–180°C) for 25–35 minutes, or until the centers are set and the tops are golden.
- Let cool slightly before removing from the pan and serving.
