Cheesy Chicken Zucchini Meatloaf (Low-Carb & High Protein)

This Cheesy Chicken Zucchini Meatloaf is a healthy, high-protein meal made with lean ground chicken, fresh zucchini, and melted mozzarella cheese. Moist, flavorful, and low in carbs, this easy recipe is perfect for anyone following keto, gluten-free, or diabetic-friendly diets.

Ingredients (Makes 4 mini loaves)

  • 1 lb ground chicken
  • ½ cup grated zucchini (excess moisture removed)
  • ½ cup shredded mozzarella cheese
  • ¼ cup almond flour
  • 1 egg
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • salt and black pepper to taste

Optional topping:

  • extra mozzarella cheese
  • fresh parsley

Instructions

1. Preheat oven

Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.

2. Prepare the mixture

In a large bowl, combine ground chicken, grated zucchini, mozzarella cheese, almond flour, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.

3. Shape the meatloaf

Divide the mixture into 4 equal portions and shape into mini loaves. Place them on the prepared baking tray.

4. Bake

Bake for 25–30 minutes until fully cooked and lightly golden.

5. Add cheese topping

Sprinkle additional mozzarella on top and broil for 2–3 minutes until the cheese melts and becomes slightly golden.

6. Garnish and serve

Garnish with fresh parsley and serve warm.
