Ingredients

  • 3 chicken breasts, cut into cubes
  • 2 zucchinis, sliced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • ¼ cup olive oil
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp thyme
  • salt and black pepper to taste
  • ½ cup feta cheese

Instructions

1. Prepare the ingredients

Preheat oven to 400°F (200°C).

Place chicken, zucchini, cherry tomatoes, bell pepper, onion, and garlic in a baking dish.

2. Season the mixture

Drizzle olive oil over the ingredients. Add oregano, basil, thyme, salt, and pepper. Mix everything well to evenly coat the chicken and vegetables.
