Ingredients
4 cod fillets (about 6 oz each)
1 cup fresh cranberries
½ cup orange juice
2 tablespoons honey
1 tablespoon balsamic vinegar
2 tablespoons olive oil
2 garlic cloves, minced
Fresh rosemary sprigs
Salt to taste
Freshly ground black pepper to taste
Orange zest for garnish
Instructions
1. Prepare the Cranberry Orange Sauce
In a small saucepan, combine the cranberries, orange juice, honey, and balsamic vinegar.
Bring the mixture to a gentle simmer over medium heat and cook for 8–10 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly.
Remove from heat and set aside.
2. Season the Cod
Pat the cod fillets dry with paper towels.
Brush them lightly with olive oil, then season with salt, black pepper, and minced garlic.
3. Grill the Cod
Preheat the grill to medium-high heat.
Place the cod fillets on the grill and cook for 5–6 minutes per side, or until the fish becomes opaque and flakes easily with a fork.
4. Add the Herbs
During the final minute of grilling, place a small rosemary sprig on top of each fillet to infuse the fish with a light herbal aroma.
5. Serve
Transfer the grilled cod to serving plates.
Spoon the warm cranberry orange sauce over the top and finish with a sprinkle of fresh orange zest.
Serve immediately.
