Healthy Lemon Garlic Grilled Chicken with Avocado Salad

Ingredients

For the Chicken

2 boneless skinless chicken breasts

1 tablespoon olive oil

2 cloves garlic minced

Juice of 1 lemon

1 teaspoon paprika

½ teaspoon dried oregano

Salt and black pepper to taste

For the Avocado Salad

1 ripe avocado diced

1 cup cherry tomatoes halved

½ cucumber chopped

2 tablespoons chopped fresh parsley

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

1. Marinate the Chicken

In a bowl mix olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper.

Rub the mixture over the chicken breasts and let them marinate for 15 minutes.

2. Cook the Chicken

Heat a grill pan or skillet over medium heat.

Cook the chicken for 5–6 minutes per side until fully cooked and golden.

3. Prepare the Avocado Salad

In a large bowl combine avocado, cherry tomatoes, cucumber, and parsley.

Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently.

4. Serve

Slice the grilled chicken and serve it with the fresh avocado salad.
