  • 2 medium zucchinis, cut into ½-inch thick rounds
  • ½ cup low-carb tomato sauce (no added sugar)
  • 1 cup shredded mozzarella cheese
  • Turkey pepperoni slices (or regular pepperoni)
  • Olive oil spray
  • Italian seasoning (optional)

Instructions

1. Prepare the Oven

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Bake the Zucchini Base

Place the zucchini slices on the baking sheet in a single layer. Lightly spray them with olive oil.

Bake for 5 minutes to slightly soften the zucchini.
