Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3–4 garlic cloves, minced

  • 1 tbsp butter
  • ¼ cup low-sodium chicken broth (or vegetable broth)
  • 1 tbsp fresh lemon juice
  • 1 cup mixed bell peppers, chopped (red, green, or yellow)
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

1. Prepare the Shrimp

Pat the shrimp dry with paper towels and season lightly with salt and black pepper.

2. Sauté the Garlic

Heat olive oil in a large skillet over medium-high heat.

Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

3. Cook the Shrimp

Add the shrimp to the skillet in a single layer. Cook for 2–3 minutes per side until they turn pink and opaque.

4. Add the Vegetables

Stir in the chopped bell peppers and cook for another 2–3 minutes until slightly tender but still vibrant.

5. Make the Sauce

Add the butter, chicken broth, and lemon juice. Stir well, scraping any flavorful bits from the bottom of the pan.

6. Finish the Dish

Sprinkle with fresh parsley and adjust seasoning with salt and pepper if needed.
