BBQ Chicken Quesadillas with Melty Cheese

These BBQ Chicken Quesadillas are crispy on the outside, cheesy on the inside, and packed with smoky, savory flavor. Perfect for quick dinners, game nights, or a family-friendly meal everyone will love.

Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 4 large flour tortillas
  • ½ cup BBQ sauce
  • 1½ cups shredded cheese (cheddar, mozzarella, or Colby Jack)
  • ¼ cup red onion, finely chopped (optional)
  • ¼ cup diced jalapeños or cooked bacon (optional)
  • Salt and black pepper to taste
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 1 tbsp oil or butter for cooking

Instructions

1. Season & Cook the Chicken

Season the chicken with salt, pepper, paprika, and garlic powder. In a skillet over medium heat, cook the chicken with onions and peppers (if using) until fully cooked and lightly golden.

2. Add the BBQ Flavor

Stir the BBQ sauce into the cooked chicken and mix until evenly coated. Remove from heat.

3. Assemble the Quesadillas

Place a tortilla flat on a clean surface. Spread a layer of the BBQ chicken mixture over half of the tortilla, then top generously with shredded cheese. Fold the tortilla over or place another tortilla on top.

4. Cook Until Crispy

Heat a skillet over medium heat and lightly grease with oil or butter. Cook each quesadilla for 2–3 minutes per side until golden brown and the cheese is melted.

5. Slice & Serve

Remove from the skillet, let cool slightly, then cut into wedges. Serve warm with sour cream, salsa, or extra BBQ sauce.
