Cheesy Mushroom Chicken with Mashed Potatoes & Vegetables

This Cheesy Mushroom Chicken is a comforting and satisfying dinner featuring juicy chicken breasts smothered in a creamy garlic mushroom sauce and topped with melted cheese. Served alongside fluffy mashed potatoes and tender vegetables, this dish creates a balanced and flavorful family meal perfect for everyday dinners or special occasions.

Ingredients

Cheesy Mushroom Chicken

  • 4 boneless, skinless chicken breasts
  • salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil or butter
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream (or milk for lighter option)
  • 1 cup shredded cheese (mozzarella, cheddar, or mix)
  • 1 tsp dried thyme or Italian seasoning
  • fresh parsley for garnish (optional)

Mashed Potatoes

  • 2 lbs potatoes, peeled and chopped
  • 4 tbsp butter
  • ½–¾ cup warm milk or cream
  • salt and pepper to taste

Vegetables

  • 2 cups broccoli, green beans, carrots, or mixed vegetables
  • 1 tbsp olive oil or butter
  • salt and pepper to taste

Instructions

1. Prepare the mashed potatoes

Boil potatoes in salted water for 15–20 minutes until tender. Drain well, then mash with butter and warm milk until smooth and creamy. Season with salt and pepper. Keep warm.

2. Cook the vegetables

Steam or sauté vegetables until tender-crisp. Toss with olive oil or butter and season lightly with salt and pepper.

3. Cook the chicken

Season chicken with salt, pepper, garlic powder, and paprika. Heat olive oil in a large skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and fully cooked. Remove and set aside.

4. Prepare the mushroom sauce

In the same skillet, add mushrooms and cook for 4–5 minutes until softened. Add minced garlic and cook for 30 seconds.

Pour in chicken broth and simmer briefly, then stir in cream and Italian seasoning. Cook until slightly thickened. Add shredded cheese and stir until melted and smooth.

5. Combine and serve

Return chicken to the skillet and spoon sauce over the top. Simmer for 3–5 minutes until heated through.

Serve chicken over mashed potatoes with vegetables on the side. Garnish with fresh parsley if desired.
