Ingredients
- 1.5 pounds beef steak (sirloin or flank), cut into bite-sized pieces
- 4 medium potatoes, peeled and thinly sliced
- 1 medium onion, diced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
- 1 cup heavy cream
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp paprika
- salt and black pepper to taste
- fresh parsley, chopped (for garnish)
Instructions
1. Prepare the beef
Cut the steak into bite-sized pieces. Season with salt, pepper, thyme, and paprika. Set aside.
2. Layer the casserole
Place half of the sliced potatoes in the bottom of the slow cooker.
Add half of the diced onion and half of the seasoned beef on top.
Sprinkle with half of the shredded cheddar cheese.
Repeat the layers with the remaining potatoes, onion, beef, and finish with the remaining cheese on top.
3. Prepare the sauce
In a bowl, mix together the beef broth, heavy cream, and minced garlic until well combined.
4. Add the sauce
Pour the sauce evenly over the layered ingredients in the slow cooker.
5. Cook
Cover and cook:
- on LOW for 6–8 hours
or - on HIGH for 3–4 hours
Cook until the potatoes are tender and the beef is fully cooked.
6. Serve
Gently stir before serving and garnish with fresh parsley if desired.
