Sea Bass

• 4 sea bass fillets (6–8 oz each)

• 2 tbsp soy sauce

• ½ tsp salt

• ¼ tsp white pepper

• 2 tbsp cornstarch

• 2 tbsp vegetable oil

Ginger Onion Sauce

• 2 tbsp vegetable oil

• ¼ cup fresh ginger, julienned

• 4 green onions, cut into 2-inch pieces

• 2 cloves garlic, minced

• 1 tbsp oyster sauce

• 1 tbsp soy sauce

• 1 tsp sugar

• ¼ cup water

Instructions

1. Marinate the fish

In a small bowl, mix soy sauce, rice vinegar (or apple juice), sesame oil, salt, and white pepper.

Rub the mixture over the sea bass fillets and let marinate for 15 minutes.

2. Fry the sea bass

Pat fillets dry and lightly coat with cornstarch.

Heat vegetable oil in a skillet over medium-high heat.

Cook the fish for 3–4 minutes per side until golden and cooked through.

Transfer to a plate and keep warm.

3. Prepare the ginger onion mixture

In the same skillet, heat vegetable oil.

Add ginger and garlic and sauté for 1–2 minutes until fragrant.

Add green onions and cook briefly until slightly softened.

Stir in oyster sauce, soy sauce, sugar, and water.
