Ingredients
- 2 salmon fillets
- 2 tbsp butter or olive oil
- 3 garlic cloves, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream or half & half
- ¼ cup grated Parmesan cheese (optional)
- salt and black pepper to taste
- fresh parsley, chopped for garnish
Instructions
1. Sear the salmon
Season salmon fillets with salt and black pepper.
Heat butter or olive oil in a skillet over medium heat.
Cook salmon for 3–4 minutes per side until golden and cooked through.
Remove from pan and set aside.
2. Cook mushrooms and garlic
In the same skillet, add minced garlic and sliced mushrooms.
Cook for 2–3 minutes until mushrooms soften and release moisture.
3. Add spinach
Add fresh spinach and cook until wilted.
4. Make the creamy sauce
Pour in heavy cream and add Parmesan cheese if using.
