Ingredients

  • 8 oz spaghetti
  • 1 cup cooked lobster meat, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 shallot, finely diced
  • 1 small red bell pepper, diced
  • 1 teaspoon smoked paprika
  • ½ cup seafood broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley (plus extra for garnish)
  • Juice of ½ lemon (optional)

Instructions

1. Cook the Spaghetti

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and reserve about ¼ cup of pasta water.

2. Sauté the Aromatics

In a large skillet, heat the olive oil and butter over medium heat. Add the diced shallot, red bell pepper, and minced garlic. Cook for 2–3 minutes until softened and fragrant.

3. Prepare the Cream Sauce

Add the smoked paprika and stir for a few seconds. Pour in the seafood broth and let it simmer until reduced by about half.

Stir in the heavy cream and grated Parmesan cheese, whisking gently until the sauce becomes smooth and slightly thickened.

4. Add Lobster and Pasta

Add the chopped lobster meat to the sauce and gently fold it in. Then add the cooked spaghetti and toss to coat evenly. If needed, add a small splash of reserved pasta water to loosen the sauce.

Let everything simmer together for 1–2 minutes so the flavors combine.

5. Finish and Serve

Season with salt and freshly ground black pepper. Stir in the chopped parsley and a squeeze of lemon juice if desired.

Serve immediately, garnished with extra Parmesan cheese and fresh parsley.
