Keto Philly Cheesesteak Roll-Ups (Garlic Provolone Version)

Rich, cheesy, and packed with classic steakhouse flavor, these keto Philly cheesesteak roll-ups are a low-carb twist on the iconic sandwich. Thin slices of beef are sautéed with garlic, peppers, onions, and mushrooms, then wrapped in melted provolone for a savory, satisfying bite.

Ingredients

  • 2 cups provolone cheese (shredded or sliced)
  • 14 oz thinly sliced beef steak (ribeye or sirloin)
  • 1 cup mushrooms, sliced
  • ½ medium red onion, thinly sliced
  • ½ green bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • 3 oz mascarpone or cream cheese, softened
  • 1 tsp Worcestershire sauce
  • ½ tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

1. Prepare the cheese base

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Arrange provolone in small circles and bake for 5–7 minutes until melted and lightly golden. Let cool slightly until pliable.

2. Cook the filling

Melt butter in a skillet over medium heat. Add onions, bell pepper, and mushrooms; sauté until softened. Stir in garlic and cook for 1 minute.

3. Add the steak

Add the sliced steak, Worcestershire sauce, Italian seasoning, salt, and pepper. Cook until the meat is browned and fully cooked.

4. Make it creamy

Lower heat and stir in mascarpone (or cream cheese) until melted and creamy. Remove from heat.

5. Assemble the roll-ups

Place a spoonful of filling onto each melted provolone circle. Roll gently while warm to form roll-ups.

6. Serve

Serve warm for the best texture and flavor.
