Ingredients
- 6 large eggs
- 2 tbsp milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup turkey ham or turkey bacon (optional)
- 1/4 cup finely chopped spinach
- 2 tbsp finely chopped green onions
- pinch of salt & black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Grease a mini or regular muffin tin.
- Whisk eggs, milk, salt, and pepper.
- Stir in cheese, turkey ham, spinach, and onions.
- Pour into muffin cups (¾ full).
- Bake 15–18 minutes until set.
- Cool slightly before serving.
