🥑 Ingredients
- 2 medium flour tortillas
- 1 cup shredded mozzarella or cheddar cheese
- ¼ cup finely chopped bell peppers
- 2 tbsp sweet corn (optional)
- 2 tbsp chopped spinach (optional)
- 1 tbsp butter or olive oil
🥄 Instructions
- Heat a non-stick pan over medium heat.
- Place one tortilla in the pan and sprinkle cheese evenly over it.
- Add bell peppers, corn, and spinach.
- Top with the remaining cheese, then place the second tortilla on top.
- Cook for 2–3 minutes until the bottom turns golden and crispy.
- Flip carefully and cook the other side until the cheese melts.
- Remove from pan and let cool slightly.
- Cut into triangles and serve warm.
