🧀 Cheesy Veggie Quesadilla

A quick, kid-friendly meal ready in minutes

🥑 Ingredients

  • 2 medium flour tortillas
  • 1 cup shredded mozzarella or cheddar cheese
  • ¼ cup finely chopped bell peppers
  • 2 tbsp sweet corn (optional)
  • 2 tbsp chopped spinach (optional)
  • 1 tbsp butter or olive oil

🥄 Instructions

  1. Heat a non-stick pan over medium heat.
  2. Place one tortilla in the pan and sprinkle cheese evenly over it.
  3. Add bell peppers, corn, and spinach.
  4. Top with the remaining cheese, then place the second tortilla on top.
  5. Cook for 2–3 minutes until the bottom turns golden and crispy.
  6. Flip carefully and cook the other side until the cheese melts.
  7. Remove from pan and let cool slightly.
  8. Cut into triangles and serve warm.
