Stuffed Butternut Squash with Feta, Spinach & Bacon

Ingredients

  • 2 medium butternut squash, halved and seeds removed
  • 3 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • 4 cups fresh spinach
  • ½ cup crumbled feta cheese
  • 6 slices bacon, cooked and crumbled
  • 1 tsp dried rosemary or thyme (optional)

Instructions

1. Roast the squash

Preheat oven to 400°F (200°C).

Brush the cut sides of the butternut squash with 2 tablespoons olive oil and season with garlic powder, salt, and pepper.

Place the squash cut-side down on a baking sheet and roast for 35–40 minutes until tender.

2. Cook the spinach

Heat the remaining olive oil in a skillet over medium heat.

Add spinach and cook for 2–3 minutes until wilted. Season lightly with salt and pepper.

3. Prepare the filling

Remove the roasted squash from the oven and carefully flip the halves cut-side up.

Scoop out a small portion of the flesh to create space for the filling.

Fill each squash half with sautéed spinach, then top with feta cheese and crumbled bacon.

4. Broil

Sprinkle rosemary or thyme if desired.

Return to the oven and broil for 3–5 minutes until the feta is slightly melted and lightly golden.

5. Serve

Serve warm as a main dish or side.
