For the Steak Bites
- 1½ lbs sirloin steak (or ribeye), cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
For the Garlic Butter Sauce
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh parsley, chopped
- ½ tsp red pepper flakes (optional)
Instructions
1. Prepare the steak
Pat the steak cubes dry with paper towels to help achieve a good sear.
Place in a bowl and toss with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
2. Sear the steak
Heat a large skillet over medium-high heat until hot.
Add the steak bites in a single layer (cook in batches if needed to avoid overcrowding).
Sear for about 2 minutes per side until browned and caramelized on the outside while remaining tender inside.
Remove from the skillet and set aside.
3. Make the garlic butter sauce
Reduce heat to medium. In the same skillet, add butter and let it melt.
Add minced garlic and cook for about 30 seconds until fragrant.
Stir in thyme, rosemary, parsley, and red pepper flakes if using.
4. Combine and finish
Return the steak bites to the skillet and toss well in the garlic butter sauce.
Cook for 1–2 minutes until everything is well coated and heated through.
